In the instructions for installing the MP tray separation pad, the first step shown is to remove a plastic piece circled in the picture. My printer does not have this piece. Is this something missing from my printer, or possibly do I just have an early model that doesn't have it?

No problem if that piece is missing; it is non-functional -- essentially it works as a dust cover for the slot where an optional envelope feeder can be installed.
