Hello.

Does anyone know if you can print/view a log of recently printed documents on this printer at all?

The only thing logged in the printer memory is an error.
You could go to the computer(s) and turn on Print Seperator
Page and that would give you a record.

I was just told that Jet Admin software, available free
from HP, can do this job. We have no experience with
this function of Jet Admin though.

HP's WJA is quite easy to use. The left side bar can be expanded, and the tools are there. At the bottom, on the left you can turn on monitoring for specific things like toner,paper etc.
Firmware updates can be installed easily from drop down menus at the top.
Usages can be assigned to any printer.
